Fitness instructor shares recipes for the fall season

(WTNH) – The holidays are just around the corner and the Certified Fitness Instructor Ashley Palumbo, shares some delicious fall recipes. Both the pumpkin pie protein shake and the fall harvest salad are healthy, high-protein, and low-fat. The full recipes can be found at openbarrewithashley.com.

Pumpkin Pie Smoothie
1 Cup Pumpkin Puree (organic best)
I Cup 0% plain greek yogurt
1 Frozen banana
1 TBSP Pumpkin Pie Spice
2 scoops of vanilla protein Powder (I prefer Orgain.)
 
Ashley’s Fall Harvest Salad
1/2 head bibb lettuce
1/2 apple, sliced
2 TBSP shredded sharp cheddar cheese
1 TBSP less or no-sugar dried cranberries 
2 TBSP sprouted pumpkin seeds
 
Ashley’s Simple Harvest Dressing 
1 tsp olive oil
1 TBSP apple cider vinegar
1 tsp maple syrup
 salt and pepper
 
1. Wash, dry and rough chop lettuce
2. add sliced apples, cheese and cranberries
3. Toss with dressing
4. top with pumpkin seeds
